Description
This potato salad uses both mayonnaise and vinegar.
Ingredients
- 2 1⁄2lb red potatoes
- 3T cider vinegar
- 1c mayonnaise
- 1t dry mustard
- 1⁄4c chopped parsley
- 1T chopped fresh tarragon
- 1⁄2T minced garlic
- 3T sweet pickle relish
- 1⁄2c diced red onion
- 1⁄2c thinly sliced celery
Instructions
Dice the potatoes in large pieces and bring to boil; simmer until fork tender.
Drain and immerse in ice-water bath to cool. Slice potatoes into rounds and put into zip lock bag; add vinegar and gently toss to coat. Chill.
Combine mayonnaise, mustard, parsley, tarragon, garlic, sweet relish, onion and celery. Gently fold in the potatoes and season with salt and pepper to taste.
